One of the best things about this breakfast is that it can be made the night before. It also happens to taste great and it’s good for you too…what a bonus! Muesli, often referred to as Bircher muesli, seems to have many names, as well as many different recipes. This particular recipe uses a variety of oats, dried fruit, apple juice, freshly grated apples and yogurt. Everything is then mixed together and then chilled in the refrigerator overnight.
The next morning you give it a little stir and voilà…breakfast is made. How easy is that; right? If you like, you can also serve it with some fresh fruit for a little extra nutrition and pizazz.
Another good thing about muesli is that you can make a fairly big batch at the beginning of the week. It will keep for a few days in the refrigerator, which is great for those busy mornings when breakfast somehow doesn’t make it on the list of “things-to-do”.
