    Thanks for the comment. Our goal in re-releasing these instructional videos is to help those that want to prepare a traditional thanksgiving dinner with learning how to multi-task. This is less about the recipes themselves.

    As mentioned in previous posts, Rouxbe is not a recipe site. We are an instructional cooking site that helps people cook better by teaching technique and skill. Cooking a turkey the correct way and managing multiple dishes has not – nor will – ever change. Having said that, variety is important and we do encourage through instruction to vary recipes to suit your personal tastes. This is what makes great recipes sites, food magazine and even food shows so helpful. They can provide ideas for changing things up. The actually cooking though will never change as it’s skill and technique-based. This is why we continue to release these videos.

    We had a fabulous dinner last night, thanks to that great video!!! I watched and re-watched it and then made notes. I did everything Joe said to do (no stuffing, no basting, checking temperature for doneness). My fresh turkey always cooks faster than the norm, and even when a bit overdone it was still juicy and delicious. The gravy – the BEST I have ever made using the bones (I couldn’t cut them so just tossed ‘em in) with vegs and water) Everybody raved about it. The cranberry sauce was amazing. I will continue to use this video for future turkey meals because I couldn’t do ALL of the dishes that you had included, but they look great. Thanks again for making me look like a STAR. I appreciate the tips….

    I used the the outlines and shopping list as my starting point for Thanksgiving and I must say overall I was delighted with the way dinner came out. Usually when I cook turkey, I baste with chicken stock , but I hadn’t considered putting the giblets and vegetables in there to make a basis for the gravy. The gravy came out super dark brown and rich and I didn’t have to stand and stir and deglaze the bottom of the pan. I just poured the stock out of the pan and added thickener (cornstarch and water in this case) Beautiful gravy! I did have to check the turkey and add more stock every half hour, because things tend to burn on the bottom with this oven, otherwise I followed your hints to the letter.

    I have a question about the pumpkin pie, however. In the ingredients, did you mean sweetened condensed milk should be used? I am so used to using regular evaporated milk and then I realized there was no sugar listed in the ingredients! I had to scrambled up another recipe to figure out how much sugar to add. The pie came out fine, so no harm done, but it may be good to make that one thing a little clearer.
