Sunday Morning Brunch

Sunday mornings…to most people means relaxing and hanging out with friends. For me it certainly does, mostly because my busy life usually makes this impossible. So whenever I do spend a Sunday morning with friends, I am happier than can be. Something great about the “act of breakfast” with friends, it just symbolizes “relaxation” for me. It is one of my favorite things to do. Mostly because it makes me feel like I have a normal life…which I do not, but it’s fun to pretend :-)
That being said…what would I make if I was having people over for brunch. Well it wouldn’t be omelette’s that’s for sure. Don’t get me wrong, I love a good omelet and have paid a lot of money to learn how to make a damn fine one at culinary school. It’s just that I have served them for brunch before and you have to make them a la minute which means no one is really eating at the same time. Even worse, sometimes guests feel like they need to wait for the cook before they start eating…and a cold omelet…well…there’s just no point, really! My partner Joe is a big fan of pancakes. I really like oatmeal raisin pancakes, as they are a bit more hardy, and they make me feel like I am eating healthier (nevermind the butter and maple syrup, I pour all over them).
I like them with perfectly cooked bacon (not too soft, not too crispy). The balance between the sweet maple syrup and the salty bacon kicks butt! A little trick with bacon (besides not eating it everyday)…is to bake it in the oven. Line a baking tray with foil and parchment and turn the oven to 325° degrees Fahrenheit. Bake for about 13 minutes, turning the pieces as needed. Works like a charm for perfectly cooked bacon.
Okay now I am hungry…so I am going to end this post here and go make some pancakes!!!!

What is a normal life?
My thought on this is we create the life we want to live.
It may not be what seems normal compareing ourselves to friends that live less complicated lives.
Live in the “NOW” enjoy the moment.

I have no complaints about my life, it is a good one. I am also a firm believer in “you make your life, what you want it to be”.
Which is part of the reason why we are working so hard right now.
