Stock Up People!

This is just a quick little post to remind you not to throw away those turkey bones. Now is the perfect time to stock up on the liquid gold (stock). It will only take you about 10 minutes to whip it together (if you are not roasting the bones and veggies, though I highly recommend that you do). The rest takes care of itself.

A batch of stock goes a long way and freezing it in little portion size packs sure makes it easy to use.

Here’s a funny little story, the other day we were “stocking up” and we ran out of room to cook dinner. So to improvise I thought why not take advantage of all of the delicious stock and poach dinner. It was yummy!

I used a perforated strainer and just submerged it in the simmering stock. It was kind of like duck confit, only instead of duck we were cooking these yummy Italian sausages and sliced potatoes (I threw in a couple of fresh bay leaves because I am madly in love with them right now).
