New Recipe Alert: Pan-Seared Scallops, Fresh Crab Cakes
We are constantly looking through our surveys and contact forms to find out what recipes you want to see next. One thing that many of you have asked us, is that youâ??d like to see more appetizers, particularly fancier appetizersâ?¦so Voila! I would also like to introduce you to our latest feature at Rouxbe (you can read about Community here) and our first â??Rouxbe Chefâ?, Curtis Webb. Curtis is an amazing chef who has been cooking for years at some of the top hotels and restaurants in Canada. When cooking for friends, Curtis is more about simple, flavorful dishes that he can cook and at the same time be able to enjoy their company.
Curtisâ?? first dish is Pan-Seared Scallops with a warm bacon sherry vinaigrette. I am telling youâ?¦ these are really really good! I know because I personally have made them now about 4 times. Oh ya! I should also mention that they are still my hands in the video and not the hands of Curtis. Just in case you were thinkingâ?¦ â??My doesnâ??t he have â??prettyâ?? handsâ? [sorry Curtis].
The next dish that Curtis made was Fresh Crab Cakes. Yum! Yum! One of the things that Curtis is good at, is knowing what ingredients go well together, and he knows how to keep it simple, letting the ingredients stand out. He doesnâ??t load the crab cakes with lots of filler which would only dry them out and hide the taste of the fresh crab. He lets the crab speak for itselfâ?¦â?Hi, I am the crabâ? [sorry, super bad humor].

I love Seared Scallops!!!!! They are very versatile. I’ve made them with a Thai curry & coconut milk sauce that marries well with the sweet briny flavors of the scallops.

I did a sit down anniversary supper for 17 and had the pan seared scallops as one of the 6 courses. It turned out absolutely incredible. Thanks for these kind of receipes.
