Black Garlic – Who Knew?
I had never heard of this until about a week ago when Daniela one of our editors sent me a link with a picture of black garlic. Apparently it has a long history in places like Japan, Korea and Thailand. Black garlic is garlic that has been fermented for about a month. The cloves become jet black with a texture sort of like roasted garlic.

I haven’t tried it myself but those that have say that it is sweet with molasses or licorice undertones. Some even describe it has having flavors similar to slow-braised meats. Here is a great article and recipe, for scallops with black garlic, from Steamy Kitchen.

I also found a site with a recipe for Mac n’ cheese made with black garlic. Apparently black garlic is one of the new “it ingredients” with foodies and fancy chefs.

We love Black Garlic! People in our office have compared it to teriyaki, french onion soup or even a sweet beef bullion. It has a strong flavor, but you can eat it straight and it won’t give you garlic breath. Mouthwateringly good.

This is the first I have ever heard of Black Garlic, I just love that Mac n cheese wow and with lobster yummy :)
Black Garlic get out of here, really, I have never seen it, can it really be true, I am going to go see if I can find it at the grocer, I am in shock thats for sure. Love your Mac n Cheese recipe, a nice change to the one that I make.
