Azteca Soup aka Tortilla Soup

With fall upon us, we turn towards foods that warm us up. This soup is just that soup. It has enough spice to warm up your insides, and plenty of flavor and substance to fill you up. You can go to almost any Mexican restaurant and Azteca soup will likely be on the menu.
In fact, we just went to one of our favorite Mexican restaurants (Salsa and Agave) the other night and Marcelo (Kimberley’s husband), ordered the Azteca soup…I don’t want to say that this recipe is better…but it is! (Hey, I just said, I didn’t want to say, not that I wouldn’t say it).
Azteca soup (sopa Azteca) or tortilla soup (sopa tortilla) has many variations. My recipe for Azteca soup starts with dried guajillo and ancho chilies…roasted onions and tomatoes that are pureed to form the base. Home-made chicken stock is then added, along with fresh corn and chunks of tender chicken breast.
The soup is finished with a tomato, serrano pepper, cilantro and lime salsa. Then just before serving, it’s garnished with fresh avocado, strips of fried tortillas and fresh Mexican crema (crème fraîche).
And on a side note, while I was doing research on what and where Azteca soup comes from, I came across this blog called “Cook almost Anything at Least Once” - It looks like a good blog, with super photos. There is a recipe for Azteca hot chocolate on the site that looks good as well.

p.s. If you are Canadian, save those turkey leftovers from Thanksgiving this weekend. This soup can be made with turkey instead of chicken, and it’s a great way to disguise the taste of turkey when you have passed your “fill line” of turkey! And on that note happy Thanksgiving to all the Canadians out there eh!
